I have a question for Paul or anyone who can answer it.  

I have seen it mentioned that 2a3s could be used when the Stereomour is set up for 45s.

While you are experimenting, remember you can plug a 2A3 into a Stereomour that is set up for 45s. Performance (power, mostly) is in between but closer to the 45. It's a third option. The reduced plate dissipation will extend the life of a 2A3 somewhat.

Looking through the 45 setup info we have 4 resistors that need to be disconnected from the ckt as well as the red and blue wires from the chokes switching positions.  My question is, does it not matter which way the chokes are wired when using 2a3s?  This doesn't seem like it should be correct so I want to check first.

Hey, I'm online for a bit tonight!

The choke is wired depending on the current. When set up for the 45, the tube current is reduced (the cathode resistor is higher resistance) so it draws approximately the same current as the 45.
